MEAL PREP IDEA: Julia’s Curry (5-7 portions)
✔️A small onion or half a large one, chopped
✔️3 or so garlic pieces, minced
✔️1 lb ground beef (or turkey or bison)
✔️Organic turmeric powder (½ to 1 TBSP), paprika to taste, curry powder (2 TBSP or to taste)
✔️Pink salt, pepper to taste
✔️Can coconut milk (the creamy kind)
✔️2 cups green peas
✔️1 can kidney beans (optional)
✔️White rice
Curry Instructions:
Cook ground beef, onion, garlic, salt, and spices until the beef is fully cooked. Add the can of coconut milk. Simmer together, add the green peas and kidney beans, simmer a bit longer then serve. Eat hot or portion out for meal prep. Recipe makes about 5-7 portions. Serve with ½ cup white rice.
